A Field Trip to Explore Fantastic Fungi

Hazel Dell Mushrooms just might be the coolest, weirdest, most interesting farm ever—a place I imagine Tim Burton would enjoy. Established in 1980 by Jim Hammond, a trained biologist, and his wife, Toni, Fort Collins-based Hazel Dell Mushrooms practices USDA-certified organic agriculture indoors, cultivating exotic mushrooms inside several outbuildings. Hazel Dell grows five kinds of mushrooms: oyster, lion’s mane, shiitake, crimini, and cinnamon caps. During a recent visit by our produce team (and me), our guide, Jared Scherger, explained that mushrooms are the spore- or seed-producing part of a fungus.
