If you haven’t yet tried a fresh, locally made whoopie pie from Inglorious Monk Bakery, prepare yourself for a religious experience. Frustrated with the shortage of delicious allergen-free desserts in stores, Nancy Coppom of Longmont, Colo., started making gluten-free whoopie pies for her family, then friends. Having grown up near Pennsylvania’s Amish Country, where the whoopie pie was invented, she decided to create a gluten-free version. The results were unique and delicious. Word spread and soon a local restaurant owner called, wondering if she could supply a gluten-free dessert.
