In the flat expanses of northern Colorado, about 30 miles east of the foothills, sits Strohauer Farms. Here, on 3,000 acres of land outside the small town of La Salle, third-generation farmer Harry Strohauer and his dedicated team cultivate corn and specialty onions such as shallots and cipollini. But their most famous crop is potatoes. They grow mainstay types like russet, red, Yukon Gold, and Purple Majesty, along with four fingerling varieties: Russian Banana, Rose Finn, French, and Purple Peruvian. Working alongside his father near Longmont, Dave Asbury dug into farming at age 11. Although he never set out to become a farmer, he did study agricultural education at Colorado State University with the thought of teaching. After working at a friend’s wholesale produce business after college, he finally took the plunge in 1984, purchasing 50 acres along Highway 66 in Longmont and starting a pumpkin patch. Today, Dave and a staff of seven operate Full Circle Farms on 1,100 acres, partly owned and partly leased in an often-challenging growing environment, the high-country desert.
