Ryman Maxwell is a big believer in the power of local economies. Back in 2009, Ryman opened the Down to Earth Café in Perkasie, Pennsylvania, sourcing local foods and even donating the café’s used vegetable oil to be converted to biodiesel. The farmers from whom Ryman sources his ingredients then use this clean-burning fuel in their tractors. Applying this full-circle approach to sustainability, and noting the lack of local, high-quality breads, is what drove Ryman to eventually establish his own bakery.
