Did you know that the “Mushroom Capital of the World” is located right here in Pennsylvania? In fact, half of all mushrooms consumed in the U.S. are grown in Chester County, Pa.  Farms in this small area of southeastern Pennsylvania produce close to 400 million edible fungi every year! Recently, I had the opportunity to tour the largest and oldest organic mushroom producer in the country, Mother Earth Organic Mushrooms, with the fourth generation to run daily operations at the farm: Jerry Yeatman and Tim Hihn.
