When weeknights are crazy-busy, we love dinners that taste delicious but take very little time and effort. That’s why we’re big fans of sheet pan meals. All you really gotta do is chop some veggies, mix up a few ingredients, pop the whole shebang in the oven, and boom! You’ve got a wholesome, mouthwatering meal—and only one pan to scrub.

Chef Cathy Christiansen has four lip-smacking sheet pan recipes you’ll want to try this week.

Sheet Pan Salmon, Broccoli, and Sweet Potatoes

Sheet Pan Salmon, Broccoli, and Sweet PotatoesDelicious meets nutritious in this colorful meal of fiber-packed sweet potatoes, antioxidant-charged broccoli, and plump wild-caught salmon fillets, loaded with protein and omega-3s.

Serves: 4
Prep time: 15 minutes
Cook time: 30 minutes

Ingredients:
12 ounces salmon fillets
1 cup balsamic dressing or teriyaki sauce
2 to 3 sweet potatoes, peeled and cubed (about 3 cups)
1 large head broccoli, cut into florets (about 3 cups)
3 tablespoons olive oil
Salt and pepper to taste

Directions:
1. Preheat oven to 400 F. Line a baking sheet with parchment paper or coat with cooking spray.
2. Place salmon in a zip-top bag with balsamic dressing or teriyaki sauce, toss to coat, and set aside.
3. Arrange sweet potatoes and broccoli on baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and toss to coat. Place in oven and cook for 15 minutes.
4. Remove pan from oven, toss veggies, add salmon, and lightly drizzle fillets with a few tablespoons leftover marinade.
5. Bake for another 10 to 15 minutes, until salmon is flaky and cooked through.

Sheet Pan Caprese Chicken and Parmesan Potatoes

Bake time: 25 to 30 minutes

Ingredients:
4 boneless, skinless chicken breasts (16 to 22 ounces)
3 tablespoons olive oil, divided
3 teaspoons Italian seasoning, divided
2 teaspoons garlic powder, divided
Salt and pepper
1 pound red potatoes, quartered
½ cup Parmesan, grated
1 ball (8 ounces) fresh mozzarella, sliced
2 cups cherry tomatoes, halved
¼ cup balsamic dressing
¼ teaspoon salt
¼ teaspoon freshly ground pepper
¼ cup fresh basil, chopped
Additional Parmesan for garnish

Directions:
1. Preheat oven to 400 F. Line a baking sheet with parchment paper or coat with cooking spray.
2. Drizzle chicken with 1 tablespoon olive oil and sprinkle with 1 teaspoon Italian seasoning, 1 teaspoon garlic powder, and salt and pepper. Toss to coat and place on prepared pan.
3. Arrange potatoes on other side of pan, drizzle with remaining olive oil, Italian seasoning, and garlic powder. Sprinkle with Parmesan and toss to coat.
4. Sprinkle chicken and potatoes with salt and pepper and bake for 20 minutes.
5. Top chicken with mozzarella slices and bake for another 5 to 10 minutes, until cheese is melted and chicken is cooked through. Remove from oven.
6. In a separate bowl, toss cherry tomatoes with balsamic dressing, salt, and pepper. Drizzle mixture over chicken breasts.
7. Top with basil and, if desired, additional Parmesan.

Sheet Pan Herbed Pork Tenderloin With Apples and Onions

Ingredients:
16 ounces pork tenderloin
3 tablespoons olive oil, divided
½ teaspoon salt
½ teaspoon freshly ground pepper
1 teaspoon garlic powder
1 teaspoon fresh thyme leaves
1 teaspoon fresh rosemary, chopped
2 red onions, roughly chopped
3 red apples (Gala, Pacific Rose, Honeycrisp), cored and roughly chopped
1 pound red potatoes, quartered (optional)
Additional salt and pepper to taste

Directions:
1. Preheat oven to 400 F. Line a baking sheet with parchment paper or coat with cooking spray.
2. Drizzle and coat pork with 1 tablespoon olive oil. In a small bowl, whisk together salt, pepper, garlic powder, thyme, and rosemary. Pat herb mixture over tenderloin and set aside.
3. Place onions and apples on pan and drizzle with remaining olive oil. Sprinkle with additional salt and pepper and toss to coat. Bake for 15 minutes.
4. Remove from oven, place tenderloin in center of apples and onions, and bake for another 10 to 15 minutes, until center of tenderloin reads 150 F. Let rest for 5 minutes and serve.

Sheet Pan Nachos

Ingredients:
1 pound ground beef
1 yellow onion, chopped
1 package (8 ounces) Frontera Taco Skillet Sauce
1 bag (16 ounces) tortilla chips
1 bag (6 ounces) shredded Mexican-style cheese
1 can (15 ounces) black beans
1 small can sliced black olives
3 Roma tomatoes, chopped
½ cup fresh cilantro, chopped
1 jalapeño, thinly sliced
4 green onions, sliced
2 avocados, peeled, pitted, and chopped
Greek yogurt or sour cream

Directions:
1. Preheat oven to 400 degrees F. Grease or coat a baking sheet with cooking spray.
2. In a skillet, sauté ground beef and onion until beef is cooked. Add taco sauce and simmer for another 5 minutes.
3. Spread tortilla chips on sheet pan, sprinkle with cheese, and top with beef, black beans, and black olives. Bake for 8 to 10 minutes, until cheese is thoroughly melted.
4. Remove from oven and top with tomatoes, cilantro, jalapeños, onions, avocados, and a few dollops of yogurt or sour cream. Serve immediately.
